I think rubbing alcohol or acetone can remove ink pretty easily. Acetone is probably stronger. Stuff sold as paint thinners will probably also do the job. Just put a bit on a rag or paper towel and give your finger a rub, washing off with soap and water.

We have a shop called Officeworks in my area and they have a good selection of pens. Like _cora_, I could easily spend a lot of time there. My favourite type of pens are smooth ball point ones that make writing easy.

It's so hard finding a good, affordable pen that doesn't smear, skip, or smudge because I'm left-handed and draw cartoons. I find extra fine line Sharpie markers are decent enough but they wear out too quickly.

Have you thought about using a mobile wrist-rest, or using some form of blotter like placing a sacrificial paper over previous work?

Too bad I never got woodworking tools before my mental crash. A mobile wrist-rest sounds like a fun little project.
