I think the chit-chat in grocery lines is a way to humanize both people.
My dad worked as a pharmacist and once commented that someone could program a vending machine to do his job. That's a pretty dehumanizing way to view a career choice.
You could see cashiers as objects you have to deal with before you can get your stuff. Or you can see them as human beings trapped behind a cash register for 8 hours to pay their bills. Human beings for who conversation may be enough of a distraction to make the shift go by a little quicker.
That may not make coming up with small talk any easier. Best bet is to "notice" how busy/not busy the store is and ask how the day has been.
