This is important for foreign pollutants from pesticides, I have, for example read that a major cause of cancer is people simply not washing fruits and veg before eating them, the pollutants cause a buildup of free-radicals which damage the body and can cause cancer. I have also noticed that many grains and pulses (eg lentils) which need to be cooked say "wash thoroughly" on them as the first step in the cooking instructions.
