Do you have a tendency to imitate others' behaviour, sense of humour, hobbies, ideas? How do you react when others start unconsciously (or maybe deliberately?) doing the same to yours?

You mean how people learn from each other?

Imitation is the most sincere form of flattery ;). But yes, I do imitate others very frequently. Mostly I imitate their mood and speaking style. I've done it kind of subconsciously for a while, it was how I started working on my social issues initially. Overall I do it less now than I used to, but I still find myself doing it occasionally.

I call it "mirror" but same same.

I build an image of this person based on the traits I admire.
The downfall is using the "in my head" person to talk to more than the real person. This leads to conflict and I end up avoiding the person I like.

But by mirroring the other person I get a favorable response 90% of the time during brief encounters. Some folks don't like themselves and then I am accused of mockery.

So the OP's question of how do I like the receiving end?
I am uncomfortable when it is done to me, I get fearful of an episode destroying the faith placed in me.
