I have made some orders in the recent past from an American online store that specialises in Geek related items. I have noticed that they sell a lot of things that are designed to be fiddled with (fidget toys) and even covers to block out the annoying flickering of fluorescent lights and various sensory related items (bought the projecting star wars planetarium - I could not resist). Is it just me, or has anyone else noticed this also?

Given the fact that the retailer simply repackages items in a "geek-friendly" manner, it doesn't surprise me in the least.
The "Kinetic Sand" product they market is a travel-sized version already marketed to individuals with special sensory needs, as is their "Mind Mass" thinking putty (therapy putty in Portal-themed/geeky containers). They simply make the item seem more appealing to a broader market and profits off of the concept.

BTW: That Death Star planetarium cost but a fraction of the Think Geek store price at Toys R Us.

Yes, their customer base may have a larger amount of Aspies than the population at large. I go there for ideas of things to buy but have also found the same things cheaper elsewhere. I hadn't thought about the demographic meaning of stim toys but now that you mention it I think you are right.
