That's exactly what I've learned to do over the years. The more I get exposed to something that I'm sensitive to, the more sensitive I get; it's a bit of a vicious circle that way. So I do exactly what you've suggested, taking little time-outs whenever I start to feel the pressure building so that it doesn't build up to the point where I can't stand it any more. I used to get really embarrassed about this, but mostly, I've found that people are usually OK with it if I just say, "my brain's a bit fried, I'm just going to take a break for a few minutes.". I always make sure that I've got ear-plugs and stim-toys etc. with me at all times too, as they really help me to let the pressure out.
