Say you are following a 'learn to draw in 60 days' series online. Even with several videos helping it is likely that trying to finish those videos from beginning to end there are going to be 'interruptions' not the least when you are getting around to appointment, chores etc. Hence keeping a commitment to such a challenge can be finicking. Also let's say that you mean to begin this not long after emerging from the guilt or aftermath of an addiction :| .

When do you 'start counting' the days if at all and how do you count (if at all) days which make for inconsistency when you can't practice?.

What is driving the timeline? Is the deadline hard or soft?

In that case this is a very soft deadline. There are no consequences if you do the project in 61 days. But if your boss says that the report has to be in by Friday. That may have some very real consequences if the deadline is not met.
