Every time I have to learn sometime it's always new, and new causes me so much pain. I don't know what to do.

Like I keep on studying things like programming and other IT-related subjects but no matter how relaxed I am at the start within a few hours I'm totally anxious about it.

I keep trying but it builds up like so much pain in the chest and it won't stop until I stop learning things.

For me, it is not a matter of "coping" and feeling anxious.  Quite the opposite, in fact.  It is a matter of knowing when to stop and assimilated what I have learned.

It's always so hard to know when to stop. I take breaks when it gets too tough otherwise I can't think straight. But there is always more to do.

Please could I ask: How come you have a stock image of an old guy for an avatar?

are you anxious or stressed? because the symptoms are similar. i used to confuse them

it's normal to feel stress after studying for people with sensory issues

There is a joke, "How do you eat an elephant? One bite at a time".

Actors or athletes often take a new task and break it down into small steps. Each step is practiced repetitively until it becomes second nature.

Essentially, something new is gone over and over until it becomes something old.

Yeah, but when you can't even watch a video on a subject because you are so anxious/stressed then I'm not sure which it is.

This is "where" you study not how to avoid the anxiety, or stress as XSara said.

"Baby Steps."
Quote:
Baby Steps: A Simple Guide to Doing Something New
By Harriet Cabelly

Achieving goals requires taking small steps. Success reinforces success.

These are the simple steps I’ve been taking to reach my goals:

1. Break big goals/tasks down into smaller, doable tasks.

2. Acknowledge and revel in your accomplishments, however small. Feel the pride and joy of the win.

3. Take baby steps.

4. Succeed.

5. Feel the pride.

6. Take more baby steps.

7. Keep moving.

8. Know that each small win is an accomplishment unto itself.

9. Keep moving.

10. Open up to bigger things as you keep moving.

It’s easier to make a comeback from a little tumble than from a steep fall. It’s a shorter road back up. So, baby steps, slow and steady. Now start with one foot and go for it.

I like learning new things, but I get very easily frustrated when doing so. When I start getting stressed out I make myself take a break and go do something else until I can calm down.

Badly which puts me off learning new things even though I know deep down I can do it, but the process of learning stresses me out.

Its something I'd like to improve on though.

I have to be interested in the subject and I need to believe that I can learn.
I have a couple of methods to fool myself into believing those two things, I don't think I can explain them though...

Tech is starting to flummox me. I used to have two working brains in the household, but then one of them got dementia. Also my eyesight is diminishing, and I don't know where my husband put my lighted magnifying glass. Have you ever noticed that the product insert (instructions, manual, warranty) that comes with tech is in TINY print?

A nurse was telling me what my husband has to stop before his stress test in a few days. "Stop any beta blockers or calcium channel blockers 24 hours before." Well I don't know what class of drugs everything is! I know their names and what they are for, but not their mechanism of action. How much knowledge am I supposed to have??
