Smalahove is a Norwegian cuisine originally for poor people, now considered a delicacy.

This is how it's made:

The skin and fleece of a sheep's head is torched to remove all remaining fleece. After the torching the head is split and unwanted material, like the brain, is removed. Traditionally it was put in water, then salted for a few days. Some (but not all) smoke the head. The salting and smoking was important in the past as a means to store it for some months in the time before freezers. Before serving the sheep head is boiled for 2-3 hours until the meat loosens from the jaw bone. The ear and eye are normally eaten first, as they are the fattiest areas and are best eaten warm. It's also these two parts as well as the tongue that is seen as delicacy.

It's eaten with potatoes and rutabaga.

Hmm, I wonder if they have a smooth softish chewiness like that of a grape? Or more a rubbery texture like a small round piece of calamari.

The eyes are probably high in protein, and may well enhance the eyesight of the eater!

Apparently it depends on which part of the eye: he claims the eye ball shell was crunchy, the retina rubbery and the rest gelatinous. I really wouldn't know myself.

Unfortunately the original recipe has been lost, so no one knows exactly how the Spartans made their lovely exotic delicacy, and the temporary soups are just Spartan Black Soup wannabes.
It is known though that it was made from pig's blood, pig's legs, salt and vinegar. The vinegar apparently was meant to keep it from clotting.
