For those unfamiliar with the term, Animal Science is the study of domestic livestock animals such as cattle, sheep, pigs, goats, and horses. I think that it also includes domestic poultry such as ducks, geese, and chickens.

A - Angus (aka Aberdeen Angus) - a breed of beef cattle.

C - Capon - a rooster with the testes removed. The resulting chicken produces more and higher quality meat. For what it's worth, I've read that caponizing roosters is illegal in the UK but I can't verify that to be true.
