O - Okra Patties
My favorite way to fix Okra
Cut okra into quarter inch (more or less) pieces
Make a batter with flour, salt, baking powder, and water. Should be maybe a little thicker than pancake batter, but not much.
Mix in okra
Bring pan with oil to heat
Drop in batter in quarter cup amounts like making pancakes
When golden brown, flip. When golden brown on second side, drain.
Eat while warm (much better warm than cold).
