Courant means 'current' or 'standard'. What would constitute courant stabbing?

You made gardant up, and I don't think stabbing has anything to do with walking in heraldry (passant).

The bear, apparently uniquely, can walk on its hind legs.

So, we may stab when "standing on left hind foot, other feet raised to fight". Glad that's cleared up.
