a project for my AAA/E class, we have to come up with a program using animals in educational activities and write a paper on it.

Research using animals studying them or they being assistants?

Some dogs can be trained to detect certain chemicals, dolphins can differentiate between different types of metals using active sonar, salmon can recognize the mineral content of their hatching grounds, birds can notice changes in their surroundings very quickly and are paranoid about them, crickets change chirping frequency due to temperature, flies can alert you to rotting food (although it's a little late by then), fireflies can help you map out your surrounding outside at night (locations of trees, etc). Just some ideas.

its using animals in programs to teach kids or people, usually kids though. :)
i have to do research on a certain program and come up with one myself.
and how to make it safe for both the kids and animals

Train them well. I suggest small dogs of some type. Depends also what size of kid they're going to be working with too.
