Cowboy Bebop, Tsubasa, and Samurai Champloo are very good as well.

a little known gem is Niea under 7. funny as hell and I like it because unlike a lot of anime, there's not sex or violence.
Ah my Goddess has more sex but is also funny, and if you haven't gotten into anything Gundam you are missing out!

Tri-Gun is okay. But gets a bit silly at times.

Have you ever watched Yu Yu Hakusho? It's great!

If you like anime series with samurais, I recommend Samurai Champloo and Peace Maker Kurogane.

I didn't read all of what you write but, tenchi Muyo, Love Hina, and Ranma 1/2 are very good.

I forgot it! Suzumiya Haruhi is a good option if you like comedy.

I'm a big fan of the Slayers series ("Slayers", "Slayers: NEXT", and "Slayers: TRY"). The novels are better, but the anime is still pretty funny.

lain
witch hunter robin
doki doki school hours (funny. REALLY funny. Also very bizarre at times. Sub quality may vary, watched a fansub for part of it, own two of the DVDs)

If I find my DVD binders while cleaning, I might be able to come up with more.

Full Metal Panic
Excel Saga
Berserk
Read or Die
Twelve Kingdoms

There's a lot to Gundam, but if you want something that's real nice and not long to get into I'd suggest 08th MS team.
