I ride all year round, on and off road, and can highly recommend it!
With regard to what bike to go for, i personally ride a 26er when hurtling through the woods, or through country trails, as, like you say, you have a bit more control. But, a cycling buddy has just brought a 29er and swears by it. I do get a feeling he will come unstuck soon though! A lot also depends on the tyres you use, the type of terrain, and the general set up of the bike. If you find a good HONEST dealer/shop they should be able to impart some free advise, and point you in the right direction. I could go on for ever about bike stuff, as it is one of my special interests, but at the end of the day, if you like a particular bike, and it feels right, go with it.
I also have a hybrid which i commute on(700c), and a racer(currently in bits). Just need a tandem and a unicycle......and a penny farthing!!
Ah, also, i would suggest a hardtail, as you get the best of both worlds, speed and stiffness with the frame, but a bit of comfort with front suspension. If you can, get forks which you can lock off if needed.
