Yeah, I generally avoid anything with highly refined carbs--wheat/flour, sugar, potatoes, etc.

I think it's fairly well established that for people with certain genetics (indigenous Americans) that stuff is VERY bad... So, I try to stay away from most of it. However, I do eat rice and corn tortillas fairly frequently...

Corn tortillas make a good bread substitute for folks going gluten free... Pro-tip: supermarket corn tortillas are not fully cooked. You need to toast them before you eat them. Toast them lightly in a cast iron skillet for tacos or toast them a lot to make tostadas/chips--they're great for scooping up and disposing of HUGE amounts of guacamole and refried beans. :)

Today I went training with a child that plays Gaelic football, an endless supply of energy would be an understatement! She taught me ball handling tips while sprinting and devised some creative drills; racing through a wooded area dodging trees and branches to improve maneuverability, who needs cones!

Banked another 17.5 miles on the terratrike before breakfast this morning!

It seems as if the Canada geese have evicted the local flock of ducks/geese at the pond at the northern end of my route.

What a bunch of hosers...
