This is my first day of vegetarianism. I've decided to be lacto-ovo and was wondering if anyone had any good recipies.

Hey I'm a vegetarian too, have been for about 3 or so years. Are you still doing it ? (been a while since you posted the op) Enjoying it?

How come you took it up?

Hey new vegetarian.. I'm an ex-vegetarian! Hehe.. well I was raised vegetarian then first ate meat at 16.. but I still don't eat much meat at all, so here is one of my favorite vegan recipes, sweet potato curry;

Ingredients:
sweet potatoes
coconut milk
garlic
onion
ginger
Thai red curry paste
chicken broth
rice

Chop up the onion and garlic and sautee them in some oil, then dice the sweet potatoes (not too small or the pieces will cook away).
Put the sweet potato cubes into the pan as well; I prefer to brown them a bit on the sides. Then grate some ginger into the pan, and shortly after add the chicken broth plus some curry paste. Let that cook for some time, then add the coconut milk and let it simmer some more. When it is done, serve over some rice!

I'm not a vegetarian at all, but I do sometimes eat vegetarian food. In fact meat can be expensive now, so I eat veg meals to supplement.

Best vegetarian is south Indian food, as well as some of the other Asian countries. Also that should fit you specif requirements.

Vegans should look for Jain food.

Interesting Devotchka mentions sweet potato curry, there is a well know veg restaurant in London called Mildred's, and they do an sweet potato and cashew curry (Sri Lankan) which is top marks.

I definitely recommend making you own pastes, or spice mixes it is so much better then shop bought. Go to an Asian grocer.

i like to try prepackaged vegetarian fare when it is marked down at my local stores.

I make this recipe with beef or pork however I'll just post the recipe without the meat since the soup is still good without meat, just not as good. Edit: An idea just popped up. Perhaps a slab or two of Tofu or Tempeh would go well in this soup, but I don't know, and I'm not really willing to try it lol.. Blegh but you vegepeople might like it so I thought I would throw that out there.

You will need:

A medium to large slow cooker/crock pot

2 Cups vegetable broth (The meat recipe uses chicken broth and I prefer it. I have used vegetable broth when chicken was not around.)
4-5 Cups water
1 Tablespoon worcestershire sauce ( Though you can pass on this if you want, as it contains little fishies and other meat in it.)

3-4 Tablespoon onion powder
3-4 Tablespoon garlic powder
3-4 Tablespoon cumin powder
3-4 Tablespoon freshly ground black pepper or pre ground. Freshly ground pepper will have more flavor and health benefits.
1 Teaspoon Sea Salt
Use the least amount of spices if you don't like much heat or spice

4-5 Medium potatoes (diced into bite size pieces)
6-8 Large stalks of celery (chopped into bite size pieces)
1lb Shredded large carrots chopped into bite size pieces or 1lb of washed and chopped baby carrots.
Half cup corn (optional)

Throw it all in the slow cooker/crock pot on high and cook for 6-8 hours. Once the time is over there you go. You have a healthy, spicy, flavorful, and vegetabully pot of goodness! Let it sit in the fridge for a couple days, and/or freeze it for later.

There is vegan worcestershire sauce, but it may not be easy to find. I found some in a Filipino grocery store.
