Like I have to do everything everyday because I lose strength for not doing it one day.

I jog ~mile to the gym.

Warm up with some pushups.

curls~3 sets of ~12 @35. probably should move to 40's as it's getting too easy.
bench 3 sets of ~12
deadlift 3 sets of 10-12
squat 3 sets of 10-12
leg press 3 sets of 12@345, probably should go a bit higher getting too easy.
same w/ shoulder presses.

what has been annoying me is my squats have been declining just because I haven't been consistently doing them.
like i could only do 8 on my 1st, 5 on my 2nd set, and didnt even do a 3rd.

and i had to keep freeing up one arm to support my back.

Maybe you should do the squats before the other exercises. The leg muscles are the biggest and require a lot of energy, if you leave them to the end of your session your body may be too tired to do them.

Having a break is for a day or two is a good way to aviod exhaustion. I have burnt myself out in the past for going to the gym everyday.

Don't forget muscles require down time to recuperate. Switch to aerobic type exercise or rest every third day at least.

Definitely do legs first. I would decrease reps and increase weights to increase strength. You could try splitting - have a legs day then an arms day. I would try to make the exercises you do more diverse - I personally love using kettlebells. Of course, it all depends on your goals.

You're more likely to lose strength by NOT taking a break. You don't build muscle while exercising - it's while you're resting. Eat lots of protein, get lots of sleep and let your muscles recover for a full day between workouts.
