I have a problem where I go into my day with great optimism and happiness and if this isn't disrupted by a stressful event I will be very productive that day, but the second somebody says or does something to upset me, I completely snap and even after it's over I spend the rest of the day feeling agitated, depressed, hypervigilant or even paranoid. When I'm in this state nothing can make me happy and I'm generally unproductive because I'm too upset to do anything. This has been happening every day to the point where I think my functioning is impaired and I feel I may have some mental illness other than ASD.

You might have something else going on as well (co-morbidity is a common thing), but this could just be sensitivity in general. I think we can all get upset about things going wrong, but we are all triggered by different kinds of things. What kinds of things might these be for you, as an example? Personally I can be extremely sensitive myself. I'll wake up in the night upset about something someone said to me (whether it be a family member, acquaintance, coworker, whatever), sometimes a recent thing, or something months or even years in the past. I had to quit Facebook, Quora, and other online forums because of what others said that got to me. That hasn't yet happened here which is nice, but I'm always perpetually ready for people to say something that sets me off. Sometimes those things are the "last straw" -- I'm fine on the surface and things seem to be going really well, but I feel I've worked hard to make everything go in sync like that, so if something interferes with that then it's enough to get me worked up...if something does go wrong it feels like my sense of order is falling apart, and I can become shaken by it.

Hmmm interesting.. I somehow know that pattern from myself.

For me, I always thought it was a tendency to OCD and overthinking. Not being able to let go of specific thoughts/feelings and to constantly think about it. Not being able to let go.
Another thing are these huge emotional responses that are so intense, that I was done for the rest of the day.

Can you relate to this?

If this has become worse recently, you may be experiencing autistic burnout.
I believe that burnout can create a hypersensitive amygdala which puts us into "fight or flight" mode too easily and means we have more meltdowns. This can be mistaken for an anxiety disorder but I believe it's probably just autism.
You need to take things easy for a while, maybe see if you can get some time off work to help your nervous system re-boot.

Oh yeah that's it. If you're close to a burn-out, this is gonna happen even more.
