The only way people don't think I'm into men is if I say I'm asexual. They generally think I'm secretly a lesbian if I say I'm asexual. But if I say I'm gay, people think I'm secretly bisexual. Or guys think I have some flexibility and think they will be my special exception.

That's weird. Usually it's the other way around - asexuals say they're asexual, and people think it's an excuse to avoid admitting they're gay. But if a woman says she's a lesbian, it's pretty much guaranteed that she's only into girls.
As for guys I've found this is one of two things much of the time - A) an ego thing - they see a gay woman as a challenge, and think so much of their own sex appeal that they can be the one to "turn" her when no other man is mighty enough to do so, and turn her into a conquest. Or B) They find lesbians so hot from porn and so on that they'd jump (no pun intended) at the opportunity to sleep with one and fulfill those fantasies. Either way - douchebags.

^ That's true of course I suppose from the OP and my own experiences with people it read like she was describing the kind of guy who knows a woman is gay, but persists in his pursuit nonetheless in an attempt to "win" her.
Surely a respectful man, who has fallen for a woman only to be told unequivocally that she is a lesbian, won't keep pursuing her and saying he doesn't believe her, trying to make her want him.

A lot of people don't see asexuallity as a real and valid sexuality and many others feel the need to challenge ones asexual identity like some kind of conquest. Sad yet true.
