i would say the Nightwish (tarja or Anette) and Within Temptation are both tied.

I used to be a decent-level Evanescence and Within Temptation fan, but they kind of bore me now that I've gotten into metalcore.

Pretty much every band already mentioned, plus Rhapsody of Fire, Dragonland, Avantasia, and Luca Turilli's Dreamquest.

Rhapsody is very cheesy, but...It's good cheese.Very powerful also.
Dragonland and Avantasia are only symphonic some of the time, but they're very good. They're both very progressive.
Luca Turilli's Dreamquest is like...Symphonic metal mixed with different types of gothic music, I suppose, and with a female opera singer.

I posted a Youtube link for each, please let me know if this is too spammy.

Were I not an atheist, I would worship Therion as the metal gods they are.

I was worried that their latest album wouldn't have that old Therion magic since the band was so drastically reorganized, but I've never been so happy to be wrong. Not quite up to the magnificence of Gothic Kabbalah, but after a few listens the new stronger-than-ever classical influence really grew on me.

Not so big a fan of Nightwish, though their new vocalist is an improvement for sure. I really want to like Within Temptation but they have something of an overly-saccharine style sometimes, plus being signed to RIAA member Roadrunner Records is a strike against them.

Epica impresses the hell out of me, especially with how fast they've developed and refined their style. They did as much development in two albums (Phantom Agony --> Consign to Oblivion) as takes some bands four or five.

Apocalyptica is a symphonic metal band, they are also a cello metal band.

First of all, Lacuna Coil and Evanescence aren't even remotely similar. Second, neither are remotely similar to symphonic metal, though Epica once made song that sounded like a symphonic version of Evanescence.

Never Enough is probably one of the worst Epica songs I've heard. It's like a regurgitated version of evanescence with a multitude of lyrical clichés.

I prefer their more classical oriented music like this -

Isn't Simone Simons the most attractive woman ever ? 8)
