Off the top of my head, Dolly Parton, Gram Parsons and Emmylou Harris (especially together), Caleb Followill, Peter Gabriel, Jay Farrar ... I could go on all day.

Seconded!

I've also always loved Karen Carpenter's voice, too, even if I don't really like her songs that much. Surprised I forgot to mention her.

I forgot to mention Karen too. I love her voice and try to emulate her when I sing.

Well, there's Tommy Korberg and Helen Sjoholm, both of whom are Swedish singers and actors. Kerry Ellis, a British singer and stage actress also has a pretty amazing singing voice.

I agree with TeaEarlGreyHot, honeyhoney is fabulous.
I also love Mark Wheat who is a dj for theCurrent 89.3 in Minneapolis. I tune in to his radio show simply to hear his voice. It is incredibly soothing.

pernell roberts [trapper john, MD]
gayle mccormick ["Smith" - notably in her rendition of "baby, it's you"]
bobby darin [singing like a cross between sinatra and bennett and oscar brown]
tom jones [he STILL rocks like nobody's business!]
and the GI sinatra himself, johnny desmond, most notably in maj. glenn miller's allied expeditionary force orchestra in europe. he could out-sinatra sinatra, AFAIC. what a crooner. he could also sing in passable german.

i am not interested in voices, but there is one voice i very much like. it is the voice of the woman on the TV show "medium". i never watched the show, but one night i went to bed with the TV on, and i woke up sometime later to the sound of her voice and i listened intently to everything she said because her voice is so soothing. here is an example.
