I met this girl on Tinder, I asked for her number because she said she doesn't get on Tinder a lot and she surprisingly gave it to me. We hit it off really quick on texting and we (well she lol) decided that we will meet in the local park. The meeting was decent, she was cool and I did alright. She texted me for the rest of the day but then she disappeared on me. I texted her a couple of times and she replied only one time to both times. I went to Olive Garden (where she works part time) with my family on Christmas eve. She saw me (I didn't saw her) and greeted me with a smile when I was going to the bathroom. When I was leaving, she said bye but no text from her. I invited her to IHop (I got a gift card) and she said she couldn't because of work (she has two jobs). She texted me Happy News Year recently but nothing else

I usually come up with a possible motive behind people's actions but I can't with this situation. I just don't understand, does anyone on this forum understand?

Seems like she is leaving the option open but not actually interested. If she was interested and willing to date, she would be reciprocating your messages and invitations. People all through your life will do strange things that make you question what their motives are, because they will be half nice and half distant. The important thing is that people who want to be around you make the effort. That's all you need to know

She lost interest. Talking to you in real life is simply having good people skills, not a sign of interest.

She’s just not that into you.
