2-3 years ago this girl danced and held hands with me in a nightclub.

She already has children and is married.

My question is why would a woman dance with a guy when she already has a husband and children?

Was it a context where dancing was assumed to be romantic, or was it a context where dancing was just for fun? Was everyone else dancing with romantic partners? Were people switching up dance partners? How cuddly was the dancing? How much eye contact were you two making? It's really hard to tell without knowing the context.

Likely for similar reasons that younger women want to dance with me.  I am "safe".  That is, while I may make a good dance partner, I am not likely to hit on them or make passes at them, mainly because I am an older man married to an attractive woman.

They may think of you as a "safe" man, but for different reasons ... perhaps they make certain sexist assumptions based on never seeing you in the regular company of only one woman.

Or maybe she’s drunk.

Or some other form of cognitive impairment.

It doesn't mean you're a bad guy.

All that means is that her drunken state might have caused her to "grind" you.

I've had that happen to me.

girls go to clubs because they like to dance, simple as that
guys go to clubs because they like girls

don't put too much attention where it's not needed. Just touching while dancing doesn't mean anything

"My question is why would a woman dance with a guy when she already has a husband and children?"

Have you ever danced salsa/bachata or swing? well they're danced in couples and (especially with the Latin dances) there's quite a lot of touching involved. You can dance with a girl just for the sake of dancing, even if her husband and kids are waiting for her at home.

I am not sure if she was flirting or making a pass but.. There are a lot of people who cheat on their partner and are open about the fact that they are cheating.
Some people have no sense of shame or conscience.

Not knowing the dynamics of her marriage; I can only speculate. It could be she has a happy marriage but her husband doesn't like to dance. He could have given his blessings for her to go out and dance. I also agree with another poster; being in a nightclub there is a good chance alcohol was involved. She might have also thought she was doing a good deed.

What do you mean by “doing a good dead”?

I was speculating she might have felt you were giving off a desperation vibe and she responded to it
