How do I avoid smiling, like when acting or telling a joke, and I have the compulsion to smile?

I'll tell you that if you can tell me how to do sarcasm. Apparently people think I'm serious when I do sarcasm because I have such a stone face.

Think of something sad or something that makes you angry.

That might work, but not if something funny catches me off guard

Gently bite the insides of your cheeks.

The key to not smiling is simply to practice. Everyone laughs when they hear a funny joke and if you think it's funny sometimes you'll laugh too. Even professional comedians laugh sometimes on stage. Funny is just funny.

One tip that can help is to sit all day and look at jokes you think are funny. Then read them again and again until they're not as funny to you. Even though the jokes aren't as funny to you anymore other people will still enjoy them. This will allow you to practice delivery without smiling during the joke. Eventually you'll be able to do this with jokes that you think are funny still.

Also, if you make people laugh with a joke then it's okay to laugh afterwards. But it's usually best to finish the joke and leave it. Otherwise you look like you're trying too hard. A lot of people think they're a class clown because they spend their whole day trying and once they get one laugh they keep trying and ruin the original laugh.

I don't know the answer to that one, and I wish I did.
I often smile at the wrong things. For example if someone tells me that someone has died I can't help it but I end up grinning. I have tried & tried to not do it but I can't stop myself.
I've tried pinching myself hard so it hurts, but that didn't work.

For some reason Asperger96 your post reminded me of a segment in Terminator 2:
