1.John Carpenter-- Yes, even though most of his music tends to be synthesized I still like the feeling it gives in his films though.
2.John Williams- whom has produced a great many musical scores such as, "The Black Hole" and "Star Wars"
3.Randy Edelman-Dragonheart(Score) Dragon:The Bruce Lee Story(Score)

Philip Glass makes some nice minimalist music for movies.
can't be bothered to think of many composers at the moment, it's more the songs I like, not the composers :P.

Oh yeah, I forgot Phillip Glass{The Illusionist, Notes on a Scandal, new music for the original "Dracula"} as well!

David Julyan {The Descent, The Prestige, Memento} creates great minimalist scores too!
