I've just updated my phone because it kept bugging me to (I've only had my phone 4 months and is the latest Motorola G8). But ever since the update, the sleep timer won't work as good as it did before, and I use sleep timer a lot when listening to audiobooks to fall asleep to. It used to close the app and return to home screen, but now it just stops the current video but the app remains open. I've looked at the settings but the "return to home screen" option is activated just like before. I've even uninstalled the sleep timer and installed a different one - but that did the same! So I uninstalled that and reinstalled the first one, but it was still doing the same. So I think the update has made sleep timer incapable of automatically closing the active app.
So now I wake up with a nearly drained battery. I don't like falling asleep with apps still actively open on my phone. And sometimes when the wifi strength is weak I have to use the 4G, which will use up a lot of a month's worth of data if the app is open for hours. I hate updates, why do they have to go and change things?
Updates are like food allergies....there to be really, really annoying.
From what you say of the problem I think it may be a setting in the operating system rather than the app. Alternatively it could be a different app running in the background that is interfering and this is where I'd look first.

I've tried everything, even uninstalling and reinstalling, and installing another sleep timer app but it's all just the same results - it stops the video but doesn't close the app, meaning the app is running all night but with the screen off. Do apps like YouTube still run if the screen is off and locked?
