I think this wrongly assumes that everyone who thinks the show should wrap up isn't a fan of the show.
Fans who want the show to wrap up are mostly worried about the show's legacy, as well as that it uses up resources that would end up being freed up to work on new shows. When the Simpsons is cancelled something will have to replace it.
As far as it's legacy goes, should the show just exist as a a pastiche of itself, like a parody without a point? They've had some pretty solid episodes recently, but there has to be a point at which they let the show wrap up.
There will come a point where the core voice talent is no longer able to perform, ignoring any other issues one might attempt to raise, like
Flanderization of most of the major characters, or how the show has jumped the shark more than once (or even 'rides the shark' as I've seen it described).
I think the parody finale episode they did actually addresses some of the problems with how to end the show well. It's been on forever and it'll be hard to end it in a satisfying way, but I'm not sure kicking the can down the road until everybody loses interest is a better way of leaving a satisfying legacy.
