I am not a goth/doom metal fan, but I am a fan of My Dying Bride. However, I have strong opinions about their work - I think the genre has been a straight jacket and because of that they can't be as good as they could be.
If you see it as genres, you end up pretending you like a lot of bands that are bottom of the barrel. Theres like 5-10% of artists that are worth your time, and they aren't concentrated in one genre.
Sometimes genres (especially microgenres) are just good shorthand for a specific sound. If I say I like mincecore and goregrind, it implies that lo-fi production style is part of the appeal and might help the other person to know I'm less interested in more hi-fi sounding deathgrind bands.
Even though I agree with you that >90% of most genres is crap, that doesn't mean that dozens of bands from a style won't all be appealing. It's a lot easier to say I like grindcore than to list off the dozens of grindcore bands I like, especially when there's only a handful of grindcore bands with significant fanbases.
