Even though the mustard BBQ is more synonymous with Carolina-style BBQ, they use it at the City Market in Luling, Texas.
Luling is 50 miles east of San Antonio.
Actually, Carolina has a couple of different styles. West Carolina focuses more on traditional, tomato based BBQ sauces where as eastern Carolina style uses more vinegar based sauces.
For me, I have my own secret dry rub mix that I put on meat, cook it over indirect heat and then depending on the meat, I'll brush some kind of sauce on it.
