Fan fiction writers and special interests

I discovered the world of fan fiction when I was around twelve and I've been part of it ever since. I have a huge problem though that is causing me a good deal of frustration. My special interests usually home in on one character in a particular area such as now where my area is Doctor Who and my character Sarah Jane. It's been his way since I was four years old.
Each interest usually brings up a story idea but then I find ways to branch out of that story by drawing illustrations or making props and I send less and less time on the story itself. Usually I give up writing the story before I've finished it and then I move quite quickly onto a new interest. This process has been around for two years now with each interest lasting predictably seven months. I hate this pattern because I now always know what is going to happen but I have no idea how I can break this pattern without stopping writing things altogether. I really hope one of you out there can give me some advise.
Also writing about something that isn't my interest doesn't usually work I've tried to do it several times and I just get bored and frustrated and then stop writing all the sooner.

Trying to keep focused can be a problem for me too. I write but I can put projects on hold and go back to them later.

However, one thing that is true of all writers is that there are only so many times you can revisit a project before you become fed up with that particular story/character. Then you have to abandon it.

It might be a good idea to create a system for yourself. You could aim to produce one story in a month, leave it alone for a month, then go back to it and rewrite/edit it. Then after that post it online and get feedback.

All the work you have put into your past interests will be a valuable resource for future writing projects. Keep all your old writing in a folder. You might find that a character/ scenario you are working on developing in the future might be fleshed out by using some of your past ideas.
