My favorite male video game character is Chris Redfield from the Resident Evil series.

Mine would have to be Vincent Valentine from the Final Fantasy 7 series

Ethan Mars from Heavy Rain.

He was one of the first game characters I've met in my life!

Tie between Solid Snake, Shulk from Xenoblade Chronicles and Zero from Mega Man X

A countdown of my top 10 (This was hard. I started out with 25 or so...):

10. Geralt of Rivia (The Witcher) - You come down here and hit it.
9. Minsc (Baldur's Gate) - There is strength in numbers, and I am two or three, at least.
8. Agent 47 (Hitman) - Names are for friends, so I don't need one.
7. The Narrator (Fallout) - War. War never changes.
6. The Nameless One (Planescape: Torment) - What can change the nature of a man?
5. Garrus Vakarian (Mass Effect) - I'm Garrus Vakarian, and this is now my favorite spot on the Citadel!
4. Sam Fisher (Splinter Cell) - You're right, Doug; I wouldn't shoot an old friend.
3. Max Payne (Max Payne) - They were all dead. The final gunshot was an exclamation mark to everything that had led to this point. I released my finger from the trigger.
2. Kane (Command & Conquer) - It would be a sad error in judgement, General Solomon, to mistake me for a corpse.

And in 1st place (the entire plot in Advent Children is basically just an excuse for bringing back the One-Winged Angel):

However, he should be scolded for making the same mistake twice: No defense against Omnislash.

I also like Ulfric Stormcloak and Balgruuf the greater from Skyrim.

This game deserves to be given a much better graphic re-make. The storyline is.. simply amazing. Hell, they should make a MOVIE out of this.

To my own surprise I agree with you a lot on Bayman and Beat, original Xbox games had some badass characters. Personally, my favorite male video game character from the original Xbox is a tie between Sergeant Johnson from Halo and Sam Fisher from Splinter Cel.
