Issues with food and weight
I am currently over 100 pounds overweight and I have been overweight since I was about eight years old, maybe younger. I think the early onset was probably genetic.
My issue is that I'm so sensitive to food that my diet is very restricted: mostly bland, carb-heavy, salty types of food. Pasta, bread, cheese, potatoes, things like that. Everything else makes me nauseous or makes my mouth feel numb because of sensory overload. I can sometimes handle green beans or English peas or apples, but not every day and not every meal.
Of course, with that small range of choices, I just don't ingest a lot of calories. I counted recently and it's barely over 1000 most days. I've had my thyroid checked and the numbers come out okay, so it's unlikely that could be preventing weight loss from cut calories alone.
I can't exercise a lot cause it leaves me out of commission for a long time, plus I have some hip alignment issues that cause pain in my feet, hips, and lower back. I liked working out before the fatigue and pain became an issue, but it never seemed to help any. It just made me tired and made my blood sugar too low.
I don't know. Is there some kind of healthy alternative to the food I can handle (I've long joked I would totally replace all my meals with human kibble if they made it)? And does anyone know of any exercises that tend to prevent post-workout fatigue?

I am around 60 pounds overweight but because of overeating and binge eating. But I do hear a lot of people talk about a slowed metabolism from long term calorie restriction.

I think a lot of people think carbs are bad but if you are eating the right sort of carbs they can actually be really healthy. You might be surprised how nutritious a potato is for example, although they seem to have been demonized. People have lived on nothing but potatoes for long periods of time and done surprisingly well on it. If you eat whole grain bread and pasta these are also quite nutritious. As long as you don't deep fry or add unhealthy ingredients.
There are a number of powdered/shake food replacement options out there to help with nutrition and weight/ calorie gain, things like Complan (not sure if outside of the UK) one I've heard of but not tried is Huel which I think is natural and you can add your own flavours. Or you could try making smoothies if textures are an issue for you.

If you're 100lbs overweight and only eating 1000 calories a day then the only explanations are a serious medical issue, or you're incorrectly counting the calories you eat. I'd say it's probably the latter, people are poor at counting what they eat in general.
If you have lower body issues you can try a hand bike as a way of burning off some calories, or simply eat less, however if you are miscounting calories then you first need to address that. For example people tend to not count drinks, snacks, sauces they put on foods etc. In the UK there is a TV show called "Secret Eaters" that focuses on these issues, it helps people who "don't understand" why they are overweight, they count their calories for a week and generally self-report around 1500-2000 per day, but when they are filmed\followed for a week it usually turns out they are eating double what they self-report.
