Is mayonnaise light really ok to eat?

Yeah why wouldn't it be?

My experience is that mayo doesn't taste as good as salad cream.

Only exception to this is vegan mayo which just tastes like salad cream.

My home-made mayonnaise is egg yolks, lemon juice, olive oil, and salt.  I found the original recipe somewhere on the Internet years ago, and modified it slightly for my tastes.

We always add a bit of mustard to it for flavor but also boiled potato, boiling water or vinegar\lemon juice probably to avoid or fix an unintegrated mix which splits instead of incorporating the oil.

To me, if mayonnaise does not separate in the fridge, it is not real mayonnaise.

Have you tried adding just enough sriracha sauce to make it spicy?  It is great as a condiment for fish dishes.

Hmm, actually i got some homemade from a lady like from a nix of peppers but partly were spicy.
Might be good although i have added some spicy dried peppers in my pepper grinder. Certainly can't handle too much of that but the capsaicin is welcomed.
