Mahjong has a solitaire variation that is quite popular.
Playing Scrabble by yourself would probably be good practice.
Cross-word puzzles, Sudoku, word search, Mad-Libs, word scrambles, nonograms (Picross)...
Pinball is quite enjoyable, I think. Mini golf/putting. Bowling and billiards (as mentioned). Darts. POGs. Marbles. Squash. Whatever those games are called that are like curling (get the object closest to the target). Horseshoes. Etc.
Any sort of game that requires dexterity, I think, is fun to practice by yourself. Sometimes I will even keep alternate scores to see which "me" wins.

Most racing games have AI controlled opponents, but some, like Out Run, just go by a timer. Even ones with opponents will usually have a "time attack" mode, where you try to beat your fastest times.
