I think my fave is sunny side up in a restaurant, but at home I usually have hard boiled eggs with oil and vinegar and pickle relish. I also like poached and scrambled.

Scrambled into fried rice.

I'm fine with soft-boiled, poached or fried but I also don't make them very often.

I mostly don't because they tend to either smell like sulfur or have a nasty snot texture.

But, if I am going to have them, I tend to have them over hard with either pepper or turmeric.

Long ago my father taught me the fine art of omeletry, and I have been told I now make better omelets than him. A well-made if ugly omelet is always my choice if I cook it myself. At a restaurant I'll do scrambled (anything more complicated they'll screw up) but they can expect a terrible review if it's the slightest bit undercooked. This is why I prefer to make food myself.

Have you tried organic eggs? They taste better, less like sulfur, and are sweeter than regular eggs. The snot texture is if they haven't been properly cooked. But I get it if eggs are just not your thing.

I just ate my daily eggs. Over medium, I believe you'd call it. I call them 'sticky'. Not runny, not solid. Sticky.

I haven't personally noticed much difference. They get somewhat less snottish in texture when they get to over easy, but it doesn't really go away until they're hard.

Ultimately, I've just seen far too many broken eggs over the years to not associate them with that disgusting mess.
