Nachos are only good when covered in hot peppers....

Here's how I like them:

A plate full of white Tortilla chips (A good mound will do)
4-8 OZ grated sharp cheddar cheese (I like Cabot Hunters sharp)
1 large tomato, cubed
1/2 small onion, diced
1 cup black california olives
1 cup pickled jalopeno slices

Bake for 5-10 minutes in 450 degree oven

eat them with guacamole, sour cream, and a liberal amount of salsa.
I also like to use hot sauce, to counter the cooling effect of the sour cream. My favorite for this is a Mexican brand called El Yucateco. I prefer the green stuff.
